Cheesy Mac & Peas

Ingredients

  • 8 oz elbow macaroni
  • 1 C cashew pieces
  • 2 Tbsp lemon juice
  • 2 Tbsp nutritional yeast
  • ¾ tsp chili powder
  • ⅛ tsp turmeric
  • ⅛ tsp cayenne pepper
  • ½ tsp Dijon mustard
  • ¾ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 Tbsp tomato paste
  • 1 Tbsp white miso paste
  • 1 C frozen peas, thawed

Equipment

  • High-speed blender (e.g., Vitamix)
  • Large (at least 4-qt) pot

Process

  1. Boil pasta per package instructions.
  2. Combine remaining ingredients (except peas) in a high-speed blender. Do not blend yet.
  3. When pasta is cooked, drain macaroni but reserve 2 cups of the cooking water.
  4. Transfer reserved pasta water to blender and blend until very smooth and velvety.
  5. Add sauce and peas to pasta and mix.
  6. Let rest for at least 5 minutes before serving.
