Cheesy Mac & Peas
Ingredients
- 8 oz elbow macaroni
- 1 C cashew pieces
- 2 Tbsp lemon juice
- 2 Tbsp nutritional yeast
- ¾ tsp chili powder
- ⅛ tsp turmeric
- ⅛ tsp cayenne pepper
- ½ tsp Dijon mustard
- ¾ tsp salt
- ¼ tsp freshly ground black pepper
- 1 Tbsp tomato paste
- 1 Tbsp white miso paste
- 1 C frozen peas, thawed
Equipment
- High-speed blender (e.g., Vitamix)
- Large (at least 4-qt) pot
Process
- Boil pasta per package instructions.
- Combine remaining ingredients (except peas) in a high-speed blender. Do not blend yet.
- When pasta is cooked, drain macaroni but reserve 2 cups of the cooking water.
- Transfer reserved pasta water to blender and blend until very smooth and velvety.
- Add sauce and peas to pasta and mix.
- Let rest for at least 5 minutes before serving.
